Whoo hoo its Friday! The weekend is almost here.
One thing I LOVE to do during the weekends is take extra time to make breakfast that includes one of my favorite foods – Pancakes! Yes, I love them with a side of fruit, uncured chicken bacon and organic coffee. I like to treat myself when I have the extra time.
I’ve found, however, that after I had eaten even one regular pancake I felt boated, over full and it wasn’t worth it in the long run. I began to search for a simple recipe that didn’t involve flour and found this recipe on several sites that couldn’t be easier – 3 ingredients!
1 Ripe Banana
½ tsp cinnamon to taste
This makes 6-8 small pancakes. It can easily be doubled for a larger crowd. Add mix-ins such as mini dark chocolate chips or nuts. Adding a pinch of baking powder will make them fluffier, and a bit of vanilla or honey helps to sweeten and round out their flavor. I used the original recipe and like it as is. You can play around with it until you get the right recipe for you and your family.
What could be easier?? You probably have all of these ingredients handy as well. I tried them for you and can tell you they are GOOD and include 2 whole food ingredients instead of processed flour. They are naturally gluten and dairy free as well.
Here’s what to do:
Mash the banana in a medium bowl and then add the 2 eggs, beating them together into a batter. Heat a skillet to medium heat with a bit of coconut oil or try with a non PFOA nonstick skillet if you want to avoid any oil. Coconut oil has a higher heat point so is a better option to use than olive oil for this type of higher heat cooking.
Add the batter to the hot skillet as small sized pancakes.
Cook as a normal pancake but I suggest using a thinner spatula as they can be a bit more delicate to flip. Make sure the bottom is a golden brown and cooked through before you flip it. You can’t rush perfection 😊.
If you are trying to cut down on added sugar, try a topping I made by experimenting with a mango I had on hand! I didn’t have any maple syrup on my pantry so I made this compote by taking some cut mango and heating it up in a small saucepan with a little bit of coconut oil, mashing it with a fork. It made the yummiest topping and I cut down on my sugar intake greatly by doing this. Was so good! You can do this with your favorite fruit of choice.
